Garlic Spinach

Makes 2 servings

* 1 tablespoon coconut oil
* 3 garlic cloves, minced
* 4 cups baby spinach
* Sea salt and black pepper

Add coconut oil to a warm pan. Once the oil is melted, add the garlic cloves.

Sauté for about 1 minute and add the spinach. Cook the spinach for about 2 minutes until wilted.

Sprinkle with sea salt and black pepper. Serve with Cauliflower Rice.
