Vegetable Lentil Soup

Makes 6 servings

* 1 tablespoon coconut oil
* 1 onion, chopped
* 1 large carrot, chopped
* 2 celery ribs, chopped
* 2 cups brown lentils, washed
* 8 cups vegetable broth or water
* 2 teaspoons cumin
* 2 teaspoons curry powder
* 4 garlic cloves, minced
* 1 bunch Swiss chard, chopped
* Sea salt (add as needed if using water)

Place a large soup pot over medium heat. 

Add coconut oil, onion, carrot, and celery. Sauté the vegetables for about 3 minutes. 

Next add 2 cups brown lentils, vegetable broth or water, cumin, curry powder, and garlic cloves. 

Mix well and simmer for 30 to 45 minutes until the lentils are tender.
About 10 minutes before the lentils are done, add the chopped Swiss chard.
