Roasted Garlic & Pumpkin Hummus

 
 

Ingredients:

* 2 (around 300grams) cups chickpeas
(already cooked)
400 grams Raw Pumpkin
1 tablespoon olive oil for roasting
* 2 cloves Roasted garlic
*1 teaspoon cumin
*1 Teaspoon Pimentón (smoked paprika)
* 1 teaspoons sea salt or pink Himalayan salt
*1 Teaspoon Pepper
* 1 lemon juiced
* 2 tablespoons tahini

Preparation:

Preheat oven to 200 degrees celsius (395 F)
Chop pumpkin into small cubes. Spread on an oven tray with 2 cloves garlic and coat with
1 tablespoon olive oil.

Roast pumpkin and garlic for 30-40 min or
until soft.

 
Place all ingredients in a food processor. Process until smooth. Add seasoning to taste.

Serve with raw vegetables or pita bread.
